Bill Smith’s Café, the renowned mom-andpop diner, was open for 66 years in McKinney, Texas, closing in the summer of 2022. When the café opened in 1956, the restaurant sat 40 guests. At that time, the location of Bill Smith’s Café was out in the boonies, in a cotton patch, surrounded by rural farmland. By the time the last customer was served, the flurry of Highway 380 surrounded Bill Smith’s Café; they had a long line of patrons waiting to walk through the doors, seated 200 guests, and cooked and served more than 70 million eggs. Regardless of the year, Bill Smith’s Café continued as a 1950s dining experience, becoming a historical landmark in Collin County.
