While most food establishments in the most recent set of food safety inspections earned “A” grades, two local restaurants earned “C” grades.
Robby’s BBQ and Steakhouse, 29385 US 82, Sadler, and Kickback’s Backyard, 1721 Armstrong, Denison, both earned “C” grades during their October food safety inspections.
Sanitarians from the Grayson County Health Department routinely inspects all businesses that serve food to the public. Such establishments are given an “A,” “B,” “C” or “F” score. An “A” means sanitarians reported no or only a few minor violations. Those with a “B” were found to have several minor violations but nothing major. Restaurants with a “C” might have a major violation or repeat offenses, but in the inspectors’ opinions, nothing bad enough to warrant an “F.”
An “A” means sanitarians reported 10 or fewer demerits. Those with a “B” received 11-20 demerits. Restaurants with a “C” had 21-30 demerits and restaurants with “F” ratings received more than 30 demerits.
In the Robby’s BBQ Oct. 24 inspection report, the inspector noted items being improperly stored and being cooked outside of the establishment.
“Meat products are being prepared and cooked at home, a male food handler informed inspector,” the report said. “The trailer with the pit is hooked up to the truck. I have observed no pit here during house the establishment is not operating.”
The report also noted things like, “Rawshell eggs observed stored above items in a cooler unit,” and “Multiple food items and products stored directly on the floor through the kitchen.”
The inspector said the establishment’s food permit was not posted for the public and the inspector was only able to observe three out of eight food handler’s certificates.
“No hair restraints observed,” the report said. “I was informed a child was staying in the kitchen. Backpacks and blankets observed for her. No children allowed in a kitchen of a food establishment.”
In the Kickback’s Backyard Oct. 18 report, the inspector noted soiled areas in the kitchen and items stored improperly.
“The interior of the microwave observed heavily soiled,” the report said. “Clean and sanitize.”
“Did not observe a food manager on site during food activity.
“Observed sugar and other foods stored directly on the back storage area. All foods must be stored 6 off floor.
“Observed a heavy accumulation of gnats in the bar area. Contact a licensed pest control company.”
There were several locations the inspector noted needs to be cleaned.
“The vent-a-hood and system observed heavily soiled with dust and grease,” the report said. “The exterior of multiple pieces of equipment heavily to moderately soiled. Clean.
“Observed a heavy accumulation of dust particles on the ceiling in the kitchen by the air diffuser.”
